Learn how to make delicious treats for this Ice Cream Sandwich Party!
Is school really starting again in just a few weeks? Is that actually happening? HOW? Well, rather than being in complete and utter denial, let’s throw a party! And an ice cream sandwich party at that! Have I piqued your interest yet? If not, you must continue to read to learn more. And if I have, you still must continue to read to learn more.
Living in South Florida, I remember many hot summers outdoors playing with friends eating my favorite frozen treats. We would swim in neighbors’ pools all day long, ride our bicycles on the sidewalk, and use our imaginations to come up with all sort of games.
Building off my own experiences, I planned this party around childhood nostalgia. And beyond my own childhood, a totally retro theme. I found these cute retro ice cream posters as a background, the little ice cream cups and spoons for my toppings, and the fun sprinkle tablecloth. I love the bright pastel colors! They are perfect for summer.
To organize this ice cream sandwich party, gather all of the necessary ingredients:
- Large cookies (see below for for recipes)
- Ice cream: chocolate and vanilla
- Toppings: sprinkles, sliced almonds, mini marshmallows, mini chocolate chips
Let me tell you about these cookies. They are crazy easy to make – with three different variations. To make the chocolate chip cookies, brownie cookies, and brookies, you will need the following ingredients:
- One package NESTLÉ® TOLL HOUSE® Brownies & More with Chocolate Morsels baking mix
- One package NESTLÉ® TOLL HOUSE® Cookies & More with Chocolate Morsels baking mix
- 2 eggs
- 1 T water + 2 T water (separated)
- 8 T butter + 6 T butter (separated)
NESTLÉ® TOLL HOUSE® Baking Mixes come in four varieties: Brownies & More with Butterfingers, Brownies & More with chocolate morsels, Cookies & More with Butterfingers, and Cookies & More with chocolate morsels. Each package comes with a full cup of morsels or baking bits and is free of artificial colors and flavors. These baking mixes allow you to really get creative in the kitchen with new twists on classic recipes.
Preheat your oven to 350 degrees for all three types of cookies.
To make the chocolate chip cookies: In a bowl with a mixer, combine 8 tablespoons softened butter, 1 egg, and 1 tablespoon of water. Add the NESTLÉ® TOLL HOUSE® Cookies & More baking mix. When combined, stir in the chocolate morsels. Chill the dough in the refrigerator so that it is firm. Scoop large cookies onto a lined cookie sheet. Bake for 10 – 11 minutes. When the cookies are removed from the oven, place on a cooling rack and place in the refrigerator to chill.
To make the brownie cookies: In a bowl with a mixer, combine 6 tablespoons softened butter, 1 egg, and 2 tablespoons of water. Add the NESTLÉ® TOLL HOUSE® Brownies & More baking mix. When combined, stir in the chocolate morsels. Chill the dough in the refrigerator so that it is firm. Scoop large cookies onto a lined cookie sheet. Bake for 10 – 11 minutes. When the cookies are removed from the oven, place on a cooling rack and place in the refrigerator to chill.
I prepared half off the dough to use for the plain cookies – as directed above – and I reserved half the dough to make brookies. What’s a brookie? It’s half cookie/half brownie and totally delicious!
To make the brookies, prepare the dough as explained above. Form a log of each dough and place them in the refrigerator in large zipper bags to chill. When the dough has chilled, roll it into sheets about 1/2 inch thick. Place one sheet over the other, and roll together to form a swirled log of dough. Use a serrated knife to slice the dough into cookies and place on a lined cookie sheet. Bake for 10 – 11 minutes. When the cookies are removed from the oven, place on a cooling rack and place in the refrigerator to chill.
Now you are ready to build your ice cream sandwiches. Begin by selecting your cookies and ice cream flavor. You can use two of the same cookies or get creative and mix-and-match to make new flavors. Place on cookie on top of the ice cream to form a sandwich.
Select your ‘topping’ – which is really more of a siding, right? Roll your ice cream cookies in the ‘topping’ of your choice to make an absolutely delicious ice cream sandwich. If you want, you can prepare a bunch at once and freeze them to serve at your party, but that isn’t nearly as fun as building them at the party and eating them immediately.
The more toppings you have at your party, the more variations your guests can make!
It’s summer… and it’s hot outside… so make sure you have lots of napkins and remind guests to eat their ice cream sandwiches quickly before they melt!
